THE HOSPITALITY INDUSTRY IS NO STRANGER TO CHALLENGES—LONG HOURS, MODEST PAY, AND, AT TIMES, LESS-THAN-IDEAL BOSSES. MY HEART BELONGED TO THE ART OF CUISINE, AND I THRIVED ON CREATING DELECTABLE DISHES. HOWEVER, THE GRUELLING 100-HOUR WORK WEEKS WERE SIMPLY UNSUSTAINABLE.
AS A SEASONED HEAD CHEF WITH A PASSION FOR EXCEPTIONAL FOOD
I SOUGHT A CHANGE THAT WOULD ALLOW ME TO REDUCE MY RESPONSIBILITIES AND STILL BE REWARDED FOR MY DEDICATION. THAT'S WHEN I DECIDED TO TAKE A BOLD STEP AND START A FOOD VAN, WHERE I COULD EXPRESS MY CULINARY CREATIVITY WITHOUT THE SUFFOCATING DEMANDS OF A TRADITIONAL KITCHEN. LITTLE DID I KNOW THAT THIS VENTURE WOULD SOON BECOME MY FULL-TIME PASSION.
